So the marketing guru behind the Girl Scouts’ cookie fund raiser is an amazing mastermind!  I mean…cookies that you can only buy once a year…GENIUS.  Because you know you better stock up during cookie sales time so you have enough to last you all year.  Seriously, my grandmother buys a whole case to freeze so she always has some delicious Girl Scout cookies on hand.

I’m not as proactive as my grandmother and I always find myself wishing for some of the famous Tag-a-longs in January….a time when you can order but still have weeks to wait.  Did I mention that I’m not one for delayed satisfaction?!Copy Cat Girl Scout Tagalong Cookies

So, luckily there’s a copy cat Girl Scout Tagalong cookies recipe that’s so close to the original you won’t be able to tell the difference.  Plus, I get to decide WHAT goes into my cookies…yeah!  Seriously…try these with honey peanut butter….mmmmmmm!

Ingredients
  • Peanut Butter Filling:
  •  1 ¼ cup peanut butter
  •  1 cup powder sugar, sifted
  • Shortbread Cookie:
  •  3/4 pound salted butter, room temperature
  •  1 cup sugar
  •  1 tablespoon pure vanilla extract
  •  3 1/2 cups all-purpose flour
  • Chocolate Coating:
  •  1 lb. Milk Chocolate for candy dipping
Instructions
  1.  Preheat the oven to 350 degrees F.
  2.  Start by making the dough for the cookies. Using a paddle attachment on a
  3. mixer, mix together the butter and 1 cup of sugar until they are just
  4. combined. Add the vanilla. In a medium bowl, sift together the flour and salt
  5. if wanted, then add them to the butter-and-sugar mixture. Mix on low speed
  6. until the dough starts to come together. If your dough is a little dry try adding
  7. Tbsp. of water at a time until the dough comes together. Roll dough into a
  8. ball and wrap in plastic, chill for 30 minutes.
  9.  Bake for 14-16 minutes, until the edges begin to brown. Allow to cool room
  10. temperature.
  11. Peanut Butter Filling:
  12.  While Cookies are baking start the peanut butter filling. In a small mixing
  13. bowl, mix together peanut butter and powder sugar until it’s completely
  14. blended and no sugar can be seen.
  15.  On a cooking sheet, lay wax paper or grease the pan with cooking spray.
  16. Place ½ tablespoon of the peanut butter mixture on the prepared pan. I used
  17. a cookie dough scooper and it worked great.
  18.  Once Cookies are cool use a spatula, remove the peanut butter from the pan.
  19. Place 1 ball in the middle of the shortbread cookie and use a butter knife to
  20. spread the peanut butter around the cookie. Repeat with remaining peanut
  21. butter balls and cookies.
  22. Chocolate Coating:
  23.  Melt Chocolate coating according to package. Once melted use a fork
  24. to dip the cookies into the chocolate.
  25.  Allow the excess chocolate to drip off the cookies and transferred to
  26. wax paper to allow cookie coating to harden.

Gotta love these Girl scout deLights! We have had some fun with the Samoa cookies this year, Heat the ltltie Samoan up a bit (stove or micro) and tuck them under a scoop of ice cream and bingo bongo Sweaty Samoan!
