I’m always looking for simple meals to make during the week…and if they only use one dish then all the better!  The less I have to do during the week the happier this mommy is….I mean between preschool, errands, cleaning the house, entertaining Little Man, growing Jellybean, loads of laundry, and writing this lovely blog….my life is pretty darn full and I cherish every extra moment I can get!  That’s why I love making this yummy breakfast casserole recipe for dinner….who says breakfast HAS to be for breakfast?

Sometimes it’s fun just to switch things up a little bit!

Most of you know, I’m a huge advocate for cooking with kids and getting them helping out in the kitchen!  And this breakfast casserole recipe is a great meal to do just that!  Now, keeping in mind that you have to be prepared when cooking with kids you need to have everything pretty well prepared ahead of time….because once you get started they don’t have the patience to wait for you to scramble the eggs or shred the potatoes.  Which is why I love using Simply Potatoes for this dish!

Simply Potatoes are already peeled and shredded ready to go!  They’re always fresh and never frozen…which is VERY important for this recipe….if you use frozen potatoes then your casserole will turn out soggy…you need fresh refrigerated potatoes.  If you’ve never had Simply Potatoes before you can easily find them in the dairy section of the grocery store….they really do make life so much simplier….and they have several different varieties to choose from.

Anyway, so I make sure that everything is pretty well ready to go and I let Little Man pour in all the ingredients to build this breakfast casserole recipe.  He loves feeling like he’s contributing and I let him handle age appropriate tasks like shredding a little bit of cheese or mixing the eggs…and of course putting everything in the casserole dish! Alright, ready for this super delicious recipe?

One Dish Baking: Breakfast Casserole Recipe

Ingredients

  • Ingredients:
  • 1 package Simply Potatoes Shredded Hashbrowns
  • 1 medium Onion diced
  • 3-5 Sweet Peppers
  • 1 cup Shredded Cheese (I prefer Colby Jack...and if you shred it yourself it has a creamier taste so I always get the bar cheese)
  • 1 cup Diced Ham
  • 8 Eggs mixed well
  • 1 package refrigerated Crescent Rolls

Instructions

  1. Directions:
  2. Preheat oven to 350 degrees.
  3. Spray 9x9 casserole dish with non-stick cooking spray.
  4. Cover bottom of baking dish with Simply Potatoes Shredded Hashbrowns.
  5. Top hashbrowns with onions, peppers, ham, and cheese.
  6. Pour eggs over casserole.
  7. Bake at 350 degrees for 30 minutes or until eggs are almost cooked completely through.
  8. Top with crescent roll dough...just unroll and place on top of casserole.
  9. Return to oven and bake for additional 10-12 minutes or until crescent rolls are done.

This looks great. We love having breakfast for dinner and have it at least once a week. I also like using Simply Potatoes. I like the shredded variety the best. Our favorite easy breakfast for dinner is Golden Rod.
