Fried Squash Recipe

As a busy mom, I know how difficult it can be to find time to make a delicious dinner for the family that everyone will eat. That’s why I love simple recipes that don’t require a lot of prep time, but still pack a punch in the flavor department. One of my go-to side dishes is fried squash. It’s easy to make, quick, and my kids love it. In this blog post, I’ll share my favorite fried squash recipe and some tips on how to make it even better.

Ingredients:

  • 2 medium-sized yellow squash
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil

Instructions:

  1. Wash and slice the squash into thin rounds. You can leave the skin on or peel it off, depending on your preference.
  2. In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. In another shallow dish, beat the eggs and milk together.
  4. Heat the vegetable oil in a large skillet over medium-high heat.
  5. Dip each slice of squash into the egg mixture, then coat it in the flour mixture. Shake off any excess flour.
  6. Carefully place the coated squash slices in the hot oil, making sure not to overcrowd the pan.
  7. Fry the squash for about 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove the fried squash from the skillet and place it on a paper towel-lined plate to drain any excess oil.
  9. Serve hot and enjoy!

Tips:

  • For a healthier option, you can bake the squash slices instead of frying them. Just place the coated slices on a baking sheet lined with parchment paper and bake at 400 degrees Fahrenheit for 15-20 minutes, or until golden brown.
  • To add more flavor, you can sprinkle some grated Parmesan cheese or chopped fresh herbs like basil or parsley on top of the fried squash.
  • If you don’t have yellow squash, you can use zucchini or any other type of summer squash.

I love zucchini. In the summer I like to make fried zucchini but have not done so yet. The heat is so intense lately I don't want to go to all that trouble ha ha! Yours is about my speed.

Today I just threw some zucchini, onion and tomatoes in a crockpot with pork chops and hope it all turns out ok! :)
