Sweet Vidalia Onion Rice- A Caribbean Rice Recipe

This Caribbean rice recipe takes sweet Vidalia onions and caramelizes them to a savory perfection while adding in a creamy base for a side dish everyone will love!

The first time my mother-in-law made this dish for me was the night we brought our son home from the hospital.  It was my first meal as a new mom and I have been addicted ever since.  She uses whatever onions are available, but I prefer Vidalia onions for their sweet flavor and amazing caramelizing ability.

Caramelized Onion Rice - A Caribbean Rice Recipe

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

This caramelized onion rice is the perfect Caribbean rice recipe side dish. Pair with kabobs, grilled chicken, or fish for a delicious and easy meal.

Ingredients

  • 2 TBS Butter
  • 1 Large Onion
  • 2 Cups of Uncooked Rice
  • 10.5oz Cream of Onion Soup
  • 10.5oz Water
  • Cilantro to garnish

Instructions

  1. In a deep set skillet, melt the butter.
  2. Dice the onion and sautee until nicely browned.
  3. Add in uncooked rice and sautee for 10 minutes.
  4. Add cream of onion soup and one can full of water to rice and mix well.
  5. Cover and simmer for 20 minutes or until rice is cooked through.
  6. Stir frequently so the rice doesn't stick to the bottom.
  7. Add more water if needed.
  8. Garnish with cilantro.
  9. Enjoy!
