In our house we LOVE a good pasta recipe! As a busy mom, I LOVE a semi-homemade easy to throw together recipe! This chicken alfredo lasagna recipe uses leftover rotisserie chicken for a super simple dinner hack.

By far, the best deal on chicken is Costco’s rotisserie chicken in their meat department. I always have my husband stop by Costco on the way home during the week to dinner easy. The first night we’ll eat the rotisserie chicken and I’ll make a few sides to go with it. But, we ALWAYS have leftovers.

After dinner on the first night, I’ll take the rotisserie chicken and debone it before putting it away in the fridge. This gives me ready to go chicken for another night’s dinner. I love using leftover rotisserie chicken to make my Semi-Homemade Chicken Pot Pie Recipe, Easy Slow Cooker Chicken and Dumplings Recipe, or this easy chicken alfredo lasagna recipe.

When I’m ready to make dinner, I just pull out the chicken, cook the noodles, and mix all of the ingredients into a baking dish to toss into the oven. I prefer taking the extra step to cook my lasagna noodles, but you can grab “oven-ready” noodles…you’ll just need to add some extra water so they’re not crunchy.

Chicken Alfredo Lasagna Recipe

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Using leftover rotisserie chicken, fresh spinach, alfredo sauce, noodles, and cheese....you can have dinner ready in a flash.

Ingredients

  • 2 Cups Shredded Rotisserie Chicken
  • 16oz Fresh Baby Spinach
  • 14oz Jar Alfredo Sauce
  • 1lb Lasagna Noodles
  • 8oz Shredded Mozzarella Cheese
  • 5oz Shredded Parmesan Cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook Lasagna Noodles until al dente.
  3. Remove rotisserie chicken from the bone and shred.
  4. Grease bottom of a 9x12 baking dish.
  5. Lay 1 layer of lasagna noodles along bottom of baking dish.
  6. Add layer of spinach and chicken on top of noodles.
  7. Pour some sauce on top.
  8. Add another layer of lasagna noodles on top of sauce.
  9. Repeat layering noodles, spinach, chicken, and sauce until you've used all the noodles...you should end with noodles on the top.
  10. Sprinkle mozzarella and parmesan cheese on top layer of noodles.
  11. Bake for 30 minutes.

Notes

You can always switch things up by swapping the spinach for broccoli or another favorite vegetable. If you want to make this recipe even easier, swap the lasagna noodles for egg noodles and no layering is needed but it still tastes just a great!
