When I was a kid the popsicle of choice in my group of friends was orange creamsicles…they were the official signal that summer vacation had begun. The problem is, they melt….quickly. So, to share this delicious treat with my family without the worry of a wet sticky mess I decided to change the popsicles into cookies and created this Orange Creamsicle Cookie Recipe that is now a hit with the whole neighborhood!

Orange Creamsicle Cookie Recipe
Orange Creamsicle Cookie Recipe – The BEST Summer Cookies EVER!
Ingredients
- 2 1/2 C flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1C unsalted sweet cream butter, room temperature
- 1/2 C granulated sugar
- 1/2 C light brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- 1 tsp fresh squeezed orange juice
- 2 tbsp orange zest
- 2 C white chocolate chips plus 1/2 C of white chocolate chips to melt later
- 1 disposable piping bag
- 1 cookie sheet fitted with parchment paper
Instructions
- Directions:
- Preheat oven to 350 degrees
- Using a standing mixer, cream together the butter, brown sugar and granulated sugar until light and fluffy.
- Mix in the egg, vanilla, orange juice and orange zest and mix until combined.
- In a medium bowl, mix together the flour, baking soda, and salt
- Gradually mix in the dry ingredients into the wet
- Once the dough has formed and everything has been mixed, mix in the 2 cup of white chocolate chips.
- Using a small ice cream scoop, scoop some batter onto the cookie sheet.
- Bake for 10-12 minutes or until lightly golden brown
- Let cool for a few minutes
- Place cookies onto another cookie sheet or wire rack and finish baking the rest of the dough
- In a microwave safe bowl, melt the 1/2 cup of white chocolate chips
- Scoop melted chocolate into the piping bag
- Cut the tip off the piping bag and drizzle the chocolate over the cookies
- Let chocolate completely harden before enjoying!
