Stewed Tomatoes with Okra Recipe
Easier, Better, and Healthier than Fried Okra Recipe!
Growing up in the south fried okra and green tomatoes are considered a delicacy! They are ALWAYS served at every holiday and special dinner! If you’ve never had fried okra and green tomatoes then you’re totally missing out…..they are DELISH! Although, not very healthy because you have to use a LOT of breading and a LOT of grease to get the consistency and flavoring just right. So even though I could totally gorge on them every single Sunday dinner I don’t.
Luckily, my mom came up with this idea to stew the tomatoes and okra with a little bit of seasoning and it tastes just as delicious as the original without all the fat and carbs! At first I thought she was insane…there’s NO WAY stewed could possible taste as yummy as fried….but man was I wrong….Hubs even went back for thirds because he liked it so much….and he doesn’t like southern veggies!
This is a perfect side dish to make and pour over some rice for a hearty and healthy meal. I like to make extra so there’s enough left over to heat up for lunch later in the week and any extras go perfectly in a vegetable soup recipe….I always use leftovers to make some Veggie Soup just like grandma used to make!
Stewed Tomatoes with Okra Recipe
Ingredients:
2 Cups chopped fresh okra
2 medium tomatoes
1 medium Vidalia or sweet onion
1 TBS Extra Virgin Olive Oil
1/2 Cup water
Salt & Pepper to taste
Directions:
Peel and dice tomatoes and onions.
Heat olive oil in the skillet and add onions.
Cook onions until they start to turn translucent.
Once onions are turning translucent add in the chopped okra and water.
Cook for about 10 minutes.
Add in tomatoes.
Cover and simmer an additional 20 minutes or until okra is cooked through (add more water if needed).
Season with salt and pepper to desired taste.
