Slow Cooker Beef and Broccoli Recipe
The Simpliest Crock pot Chinese Beef and Broccoli Recipe Ever!
Lately I have been on a slow cooker, crock pot, one dish meal kick….I mean, let’s face it…at 7 months pregnant I do not want to be standing in front of a hot stove cooking…heck….I don’t want to be cooking most days! But, I have to because it’s better for my family than eating out and with Jellybean due to arrive during the middle of cold and flu season we will be spending most of our time at home. So I figure now is the best time to come up with some new, simple, use as few dishes as possible, yummy recipes!
We love eating Chinese around here….if you haven’t checked out my Super Simple Chinese Restaurant Donuts and Chinese Chips recipes you totally need to….they’re AWESOME if I do say so myself! 😉 Anyway, I grew up eating Chinese at least once a week if not more….they knew us so well at the local Chinese restaurant that I used to go play in the kitchen with the owner’s son and my mom even had a dish named after her. To this day I can live off Chinese food and usually do when I’m sick….it’s a magic cure all!
Alright, back to the point at hand….. I decided that I needed to make my favorite dish, Beef and Broccoli, at home but I decided to make it even simplier than standing over the stove and stir frying it. I figure why not throw it in the crock pot….which is an AWESOME idea because the meat has time to become REALLY tender and it literally melts in your mouth! The key to making Beef and Broccoli in the slow cooker is to not add the broccoli until you’re almost done cooking….that way you have the super tender meat and the al dente broccoli…just like in the Chinese restaurant. You can also very easily sub out the red meat for chicken or pork or whatever you wish. So let’s get on with how to make this yummy recipe!
Slow Cooker Beef and Broccoli Recipe
Ingredients:
1 LB Steak (I like to use London Broil or Top Round)
1 TBS Sesame Seed Oil
1 12oz Can Lemon Lime Soda (I use Sprite)
1 Vegetable Bullion Cube
1/2 Cup Brown Sugar
1/3 Cup Soy Sauce
1 TBS Garlic Powder
2 TBS Cornstarch
2 Cups Broccoli
Directions:
Slice your steak in thin strips and place in slow cooker.
Mix together sesame seed oil, soda, bullion cube, brown sugar, soy sauce, and garlic powder.
Pour mixture over steak in slow cooker.
Cook on low for 6-8 hours.
Chop broccoli into bite size pieces and add to slow cooker.
Cook for additional 30-45 minutes or until broccoli reaches desired softness.
Turn slow cooker off and scoop half of the sauce into a small sauce pan.
Add cornstarch to sauce in saucepan and bring to a boil on the stove top….stirring constantly.
Once sauce thickens remove from heat.
Serve beef and broccoli over rice and drizzle with thickened sauce.
