So you guys know that I’m always on the hunt for quick and easy recipes that are super delicious!  Well, give this roasted potatoes, onions, and red peppers recipe a try and you won’t be sorry!

I’m actually baking more right now for dinner and the aroma that is filling my house is delectable!!!  My mouth is literally watering right now!  I think it’s the Pompeian Arbequina olive oil that’s releasing this intense smell that has tones of pepper and grassyness (yep, that’s my own word to describe this oil– it’s a nice earthy smell that makes you think about being outside in the Spring)….my house smells AH-MAZING right now!!!

Roasted Potatoes, Onions, and Red Peppers Recipe

Ingredients:

3 Cups Potatoes (I used whole finger potatoes…but you can also use Red potatoes or Idaho potatoes peeled and diced.)

1 Medium Red Pepper

1 Medium Sweet Onion

3 TBS Pompeian Arbequina Olive Oil

Directions:

-Preheat oven to 350 degrees

-Slice Red Pepper and Onions

– Place all ingredients in baking dish

-Drizzle with Olive Oil

– Stir to lightly coat all ingredients in olive oil

-Bake at 350 degrees for 45 minutes
