A Crock Pot Chicken Soup Recipe with a Spicy Twist!

Are you bored with plain ol’ chicken noodle soup?  Looking for a new recipe that’s sure to put a little spice in your step?  This Spanish Slow Cooker Chicken Soup Recipe is a delicious alternative to the infamous Chicken Noodle Soup.  Plus, I love that the flavors all simmer together in the slow cooker to make a flavorful dish the whole family loves!

Spanish Slow Cooker Chicken Soup

Spanish Slow Cooker Chicken Soup

Ingredients

  • Chicken Broth
  • 1 Can of corn
  • 1 Can of black beans
  • 1 Can of fire roasted garlic tomatoes
  • 1 Red onion - diced
  • 1 lg. Jalapeno - seeds removed and diced
  • 1 bundle of Cilantro - leaves pulled of stems and finely minced
  • 4-5 limes - juiced
  • 1 Rotisserie chicken - Meat pulled off the bone
  • 1 Tbsp. of Cumin
  • 1 Tbsp. of Black Pepper
  • 1 Tbsp.of Salt
  • 1 Tbsp. of Chili Powder
  • 6-7 stalks of green onion - diced for garnish
  • 2- Avocado - seed removed and chopped

Instructions

  1. Using a crock pot on high heat
  2. Add your broth first , then your canned items ( drain off excess juice from each can ) - Stir to combine
  3. Dice your onion, jalapeño, cilantro and add to the soup - stir to combine
  4. Slice your limes and squeeze the juice into your soup - stir to combine
  5. Begin to peal your pre-cooked chicken off the bone and place all the meat in your soup - Stir to combine
  6. Add your Cumin, Black Pepper, Salt, and Chili powder to soup and stir to combine
  7. Let cook for 2 hours on high
  8. Prepare your garnish, chop the avocado and green onions - set to the side

The great thing about this soup recipe is that you can change up the spiciness to your own personal desires.  If you want it less spicy just remove the jalapenos… or add a bit of sour cream as a garnish to cool the spice…it’s sooooooo good!  If you want it spicier just add more peppers and enjoy!  No matter how you prefer it…this Spanish Slow Cooker Chicken Soup Recipe is sure to please the whole family!

Or, you can easily make this soup more of a cream based stew by adding some cream cheese at the end of the cooking process, just like I do in the O-M-G BEST Crockpot Chicken EVER Recipe.
