A delicious 30 minute meal
I’m always on the hunt for a delicious, simple meal, that I can have ready in 30 minutes or less! The problem is that I have a very picky 2 year old and a very hungry husband so I have to find something that’s hearty, delicious, and nutritious….something that I don’t have to slave away for hours in the kitchen to make.
I LOVE this Pork Tenderloin Stroganoff Recipe because it’s a fun twist on traditional Stroganoff.
My family is not a big fan of mushrooms but we love Stroganoff….weird I know!
Pork Stroganoff might not be the first dish that comes to mind when you think of Stroganoff, but this take on the classic is sure to leave your taste buds dancing.
Trading out the traditional beef for pork gives this dish a lighter, yet equally delicious, taste.
Pork Stroganoff FAQs
Can I use a different cut of pork?
Absolutely! While lean pork cuts are recommended for a tender result, you can use cuts like pork shoulder or tenderloin. Just adjust cooking times as necessary.
Is there a substitute for sour cream in stroganoff?
Yes, if you’re looking for an alternative, Greek yogurt or crème fraîche can be used in place of sour cream. It will give a similar creamy texture and tangy flavor.
Can I make this recipe ahead of time?
Pork Stroganoff is best served fresh. However, you can prepare the pork and vegetable base a day ahead and add the sour cream just before serving.
How do I store leftovers?
Store any leftover Pork Stroganoff in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding a splash of broth or water if it’s too thick.
Is there an alternative to using flour for thickening?
Certainly! Cornstarch is a great alternative. Mix a tablespoon of cornstarch with cold water to make a slurry before adding it to the dish.
Can I use another type of meat?
While this recipe focuses on pork, you can easily substitute it with beef, chicken, or even tofu for a vegetarian version. Cooking times may vary.
How can I make this dish spicier?
If you like a kick to your dishes, consider adding a pinch of crushed red pepper flakes, some diced chili peppers, or a dash of hot sauce.
What do I serve alongside Pork Stroganoff?
This dish pairs well with steamed green beans, roasted vegetables, or a crisp salad. For a carbohydrate fix, consider garlic bread or roasted potatoes.

Ingredients
- 1 lb of lean pork, cut into thin strips
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef or vegetable broth
- 1 cup sour cream
- 2 tbsp butter
- 2 tbsp flour
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Egg noodles or rice, for serving
Instructions
- Preparation: Start by prepping your ingredients. This ensures a seamless cooking process for your Pork Stroganoff.
- Pork Sauté: In a large skillet, melt butter over medium-high heat. Add the pork strips, seasoning them with salt and pepper. Sauté until they're nicely browned and set them aside.
- Onion and Garlic Infusion: In the same skillet, add the chopped onion and minced garlic. Sauté until translucent.
- Mushroom Magic: Toss in the sliced mushrooms and cook until they release their juices and begin to brown.
- The Base: Sprinkle flour over the mushroom and onion mixture, stirring constantly. This helps in thickening your Stroganoff. Gradually pour in the beef or vegetable broth and stir.
- Bringing It Together: Return the pork to the skillet, reduce the heat to low, and let it simmer for about 10 minutes.
- Finishing Touch: Stir in the sour cream until well combined and heated through. Do not let it boil.
- Serve: Pour your Pork Stroganoff over cooked egg noodles or rice, garnish with fresh parsley, and enjoy!

Let me know what you think! We love Stroganoff here too...except we're not fans of mushrooms...if you like it with the mushrooms then just switch the cream of onion for cream of mushroom. :)
