This is by far one of my FAVORITE meals to make when the weather starts to turn warm like this! It makes me dream of visiting tropical lands, lounging on the beach, listening to the surf roll in while some Jimmy Buffet wafts through the background…ah Summer….I can’t wait!

Here’s my Sweet Pineapple Hawaiian Chicken Recipe.

Alright, on to the good stuff… this is such an easy recipe- the time consuming part is waiting on it to cook- all of 40 minutes!  You can just throw it in a dish and leave it to bake while you relax out on the porch with friends!

Ingredients:

1 Can of Diced Pineapple

1 Red Sweet Pepper

1 Yellow Pepper

1.5 Lbs of Boneless Skinless Chicken Breast (although I’m sure you can make this with any type of chicken—wings would be really good!)

1 TBS Chili Powder

Dice up your peppers and chicken.  Sprinkle a little Chili Powder over your chicken and place in a baking dish.  Cover chicken with peppers and pineapple (and the juice).

Bake at 350 for 40 minutes- or until your chicken is done.

I love to make this meal with some sweet Vidalia Onion Rice and of course my yummy Simple Summer Squash!

Thrive Market - It's like the Costco of organics...this is where I get all of my sugar, flour, baking supplies, kids snacks, etc.
Zaycon Foods- This is where I buy most of my meat products in bulk.  The quality is amazing and the prices just can't be beat!  I mean, $1.89 a pound for boneless all-natural chicken breasts!!  It is bulk but you can always split with a friend or make up a bunch of freezer meals like I do!
