She uses whatever onions are available, but I prefer Vidalia onions for their sweet flavor and amazing caramelizing ability.
Caramelized Onion Rice - A Caribbean Rice Recipe
This caramelized onion rice is the perfect Caribbean rice recipe side dish. Pair with kabobs, grilled chicken, or fish for a delicious and easy meal.
Ingredients
- 2 TBS Butter
- 1 Large Onion
- 2 Cups of Uncooked Rice
- 10.5oz Cream of Onion Soup
- 10.5oz Water
- Cilantro to garnish
Instructions
- In a deep set skillet, melt the butter.
- Dice the onion and sautee until nicely browned.
- Add in uncooked rice and sautee for 10 minutes.
- Add cream of onion soup and one can full of water to rice and mix well.
- Cover and simmer for 20 minutes or until rice is cooked through.
- Stir frequently so the rice doesn't stick to the bottom.
- Add more water if needed.
- Garnish with cilantro.
- Enjoy!
