Fall has arrived!!  There’s a cool breeze in the air, the leaves are changing colors, football season has begun, and the kids are back in school.  If you’re like me then you’re always on the hunt for quick, delicious, and nutritious breakfast ideas…preferably those on the go!  That’s why I love these It’s Fall Y’all Muffins…there’s a taste of fall in every bite and Little Man LOVES them….not to mention they’re packed full of nutritious ingredients!  Did you know that September is Better Breakfast Month?

I love mixing peanut butter into breakfast recipes because it’s a good source of fiber, good for you fats, 8 grams of protein and more than 30 essential nutrients and phytonutrients.  By adding a strong protein like peanut butter to our breakfast meal Little Man feels fuller longer and has enough energy to last him through til lunch!

Did you know that according to the National Peanut Board just one 12oz jar of peanut butter contains 540 peanuts….and the largest peanut butter factory churns out 250,000 jars a day?!  That’s because 90% of Americans have at least one jar in their pantry at all times…making it a quick and simple ingredient that many people already have on hand.  It’s really good spread on a bagel or waffle instead of using syrup or cream cheese….and so much more nutritious…give it a try!  You can find a whole bunch of recipes using Peanut Butter for Breakfast!

Alright, back to these yummy It’s Fall Y’all Muffins….these muffins are dense, hearty, and packed full of flavor!  Little Man likes to get in on the action of helping to make them…you know me, I love coming up with ideas to get cooking with kids.

Cooking with kids can be so rewarding!  It’s a great learning and bonding experience but it’s also a great self esteem builder.  The pride that Little Man has when he’s helped make something the kitchen can be seen all over his face and is priceless!  He beams from ear to ear when trying his latest recipe and loves having other people try it with him.  At only 2 1/2 he’s become quite the little helper in the kitchen and it makes me so proud.

When cooking with kids it’s important to keep the tasks age appropriate.  I’ll usually measure out the ingredients and let Little Man pour them in.  Then he can use the whisk to mix the ingredients together before we start the mixer….which he knows he can only watch…not touch….but he LOVES watching it go “faster and faster mommy!”.

It’s Fall Y’all Peanut Butter Muffin Recipe

Ingredients:

1/4 Cup Peanut Butter

1 1/2 Cups Flour

3/4 Cup Quick Oats Oatmeal

1/4 Cup Brown Sugar

1/2 TBS Baking Powder

1/2 tsp Salt

2 TBS Pumpkin Pie Spice

1 tsp All Spice

1 Egg

1 TBS Vanilla Extract

1 1/4 Cups Milk

Ingredients for Peanut Butter/Honey topping:

1/4 cup peanut butter

1/4 cup honey

Directions for muffins:

Preheat oven to 400 degrees

Mix together dry ingredients: Flour, oatmeal, brown sugar, pumpkin pie spice, all spice, and salt.

In a separate bowl mix together wet ingredients: milk, egg, and vanilla extract.

Pour wet ingredients into dry ingredients and mix on medium speed for about 3 minutes.

Spoon mixture into lined muffin tins.

Put peanut butter into a ziplock bag and cut off the tip.

Drizzle peanut butter on top of muffins.

Bake at 400 degrees for 6 minutes then lower oven temp to 325 degrees.

Bake at 325 for additional 6-8 minutes or until cooked through.

Let cool.

Directions for peanut butter/honey topping:

Mix together peanut butter and honey in a bowl.

Microwave for 15 seconds.

Stir til ingredients are fully mixed.

Drizzle on top of muffins.
