Instructions:
- Wash and slice the squash into thin rounds. You can leave the skin on or peel it off, depending on your preference.
- In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
- In another shallow dish, beat the eggs and milk together.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Dip each slice of squash into the egg mixture, then coat it in the flour mixture. Shake off any excess flour.
- Carefully place the coated squash slices in the hot oil, making sure not to overcrowd the pan.
- Fry the squash for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fried squash from the skillet and place it on a paper towel-lined plate to drain any excess oil.
- Serve hot and enjoy!
Tips:
- For a healthier option, you can bake the squash slices instead of frying them. Just place the coated slices on a baking sheet lined with parchment paper and bake at 400 degrees Fahrenheit for 15-20 minutes, or until golden brown.
- To add more flavor, you can sprinkle some grated Parmesan cheese or chopped fresh herbs like basil or parsley on top of the fried squash.
- If you don’t have yellow squash, you can use zucchini or any other type of summer squash.

I love zucchini. In the summer I like to make fried zucchini but have not done so yet. The heat is so intense lately I don't want to go to all that trouble ha ha! Yours is about my speed.
Today I just threw some zucchini, onion and tomatoes in a crockpot with pork chops and hope it all turns out ok! :)
