One of our New Year’s Resolutions was to eat out less and eat healthier.  My husband has started taking his lunch to work- but he’s getting tired of sandwiches all the time!  So, I decided to make him some chicken burritos…. YUMMY!

These are perfect to make up a whole batch- throw them in the freezer- then he just grabs one out in the morning to take with him.  By lunch time he can just toss it in the microwave for about 2 minutes and he’s got a good, hot, lunch ready to eat!

SO, I’m going to share with you my Simple Chicken Burrito recipe that is perfect for Once A Month Cooking!

2 Packs of Flour Tortillas (I used whole wheat this last time and he loved them!)

3 Boneless/Skinless Chicken Breasts

1 Jar of Chunky Salsa

1 Cup of Rice (I used brown rice last time to make it healthier)

2 Cups Fat Free Shredded Cheese

1 Can Black Beans

Boil the chicken breast for about 45 minutes or until cooked all the way through. Then take 2 forks and shred the chicken breasts in a bowl (drain the water before shredding).

Mix in the salsa with the shredded chicken.

Cook your rice to desired firmness. (It’s okay to be a little al dente because it will soften a little bit when it’s frozen and reheated).  I added some frozen corn to the rice and it turned out really good!

Now, put together your burritos.  I spread a little bit of rice on the bottom, then top it with the Salsa Chicken, black beans, and shredded cheese.  Then just fold each side in and wrap a paper towel around your burrito.  Then I wrap each burrito in a piece of aluminum foil, put them in a large freezer bag, and toss them in the freezer.

There you go…. easy lunches whenever you need them!  I think next time I might make carnitas (pork) for the stuffing…. my husband LOVES carnitas!
